On TR6's you have to get at it from the inside of the firewall so some people have made a wire wire pull to easily release it. (for example if the release cable breaks.)
Fortunately with the TR7 they have already gave us an easy fix. You will notice in the screen above the latch there are two holes. Don't know how far this goes back but it's on my 1980. You can get a screw driver or hook to get the latch open. As the latch opens on different sides on N/A and UK they put the two holes there so it would work on both.
If you're moving the bonnet around a lot you could remove the latch pin and replace/adjust it after the bonnet is positioned properly. Don't forget the hinges have shims to adjust up and down to adjust height of leading edge.
