Agree with Sonscar, after fitting new springs the car won't settle much.
But springs will sag with age and use, so when you replace original ride height old springs for new original ride height springs the car will sit higher.
Here's a picture of my DHC, still on the original springs and dampers, car's 10 years old here ...

And for comparison this one a few years after its restoration and fitted with 1" lowered 200 lbs springs all round ...

I have fitted new rear springs ("standard") to my resto project and I have to say I am worried about how high it looks. I could get an elephant sideways through the body from wheel arch to wheel arch.

This is more or less to the original ride height according to the workshop manual (adjustable coil overs on all four corners) ...
