Roughly 1mm thick, I haven't seen any thicker steel and I usually use 0.9mm CR4 for repairs. Most of the body strength is due to gussets and profiling of the sheet steel panels, every time the metal is stretched for gussets etc then it will be thinned. Modern cars use even thinner steel which is a different grade to our cars.
I have replaced most of the bulkhead and the entire windscreen surround on my Grinall, the steel is very thin and delicate and is a pain to MIG weld.
